At just under three hectares, William Fevre retain a goodly part of the viticulture at Les Preuses. Planted to fortuitous southern exposures on a terroir of densely compacted clay over limestone soils, the wines of Les Preuses are characterized by their exceptional longevity and remarkable grace. Situated along the crest of Cote des Grands Crus, Les Preuses is named for an ancient Roman road which runs alongside and dlineates the southern parcels of the vineyard.

The dozen or so hectares of Les Lys on the left bank of River Serein, are a delineation within the much larger appellation of Les Vaillons. Domaine William Fevre manages a precious single hectare of Les Lys, conspicuous for its traditions of being private property of the Roi himself. Planted to rich clay soils within a unique mesoclime, the fruit here yields a rather more delicate and refined style of Chablis.

A superior climats within the greater appellation of Vaillons, the dozen propitious hectares of Les Lys lie within a kilometre of the old town centre at Chablis. So conspicuous was the quality of wine from this precious site, that it came to the attention of Bourbon kings, the first Chablis vineyard ever acquired by French royalty. William Fevre own a single hectare of the historical property, treating the hand picked grapes to a combination of neutral fermenters and well seasoned oak barrel, a captivationg wine with fruity, floral bouquets and delicate minerality.

The soils of Les Lys are a distinguished sub appellation within the greater Les Vaillons. Gently sloped soils which are higher in clay deposits than the surrounding terroirs of Chablis, yield a noticeably elegant style which appealed to French royalty. The exclusively hand picked fruit is treated to the traditional Burgundy style of barrel ferments in well seasoned oak, followed by a year or more maturation on fine lees. Her very fine perfumes and charming palate make Les Lys the perfect accompaniement to john dory fillets or dover sole.

Nothing says Chablis like William Fevre, one of the most enduring family names in all Burgundy. The marque's precious historical sites include the largest endowment of peerless Grands Crus vineyards. Fourchaume sits just a kilometre north of the prestigious cadre of Grand Crus, perched along slopes on the propitious right bank of La Serein, there are well over a dozen Climats within Fourchaume, William Fevre retain the very finest. A charming, elegant wine of characteristic roundness, exquisite balance and essential Chablis mineral richness.

The various négociant blocks of Fourchaume are fortuitously positioned along the sloping right banks of River Serein. Vines enjoy excellent exposure, planted southeast to southwest, encouraged by the richly mineralled and fossil shelled soils, to yield the most charming wines, characterized by the refined ebullience of Chablis. A highly aromatic bouquet, dominated by fruityness and floral, precedes an elegant palate of controlled power and racy fruit opulence.

Domaine William Fevre retain a pricelss endowment of twenty hectares within the finest precincts of Chablis. An assemblage of harvests, collated on the basis of excellence and refined balance, are treated to a traditional Burgundian course of oak barrel ferments and term of age, combining a lovely fruitiness with attractive freshness, structural richness and exquisite minerality.

Wiliam Fevre are the largest retainers of Cru Bougros, operating six of the twelve hectares of vine, grown to predominantly clay soils which are somewhat deeper than those of sub Cru Bougros Cote Bouguerots. This distinguished climat lies at the very western end of the Cote des Grands Crus, at altitudes ranging from 130 to 170 metres, on rather deep marl and clay terroirs on a southwest exposure. Cru Bougros produces rich and characterful styles of wine, articulate of Chablis with a measure of elegance and finesse.

From two precious hectares of a unique sub appellation within the distinguished Bougros Grand Cru. At the very bottom of the twelve hectare Bougros, lies a steep slope of south facing vines, grown to precipitous and challenging angles of thirty degrees or more, which enjoy the fullest exposure to the sun's rays. The auspicious vines on Cote Bouguerots are planted to shallow clay and pebble soils, which reduce vigor and limit the yields, achieving the most complex, big boned and suave styles of Chablis.

One of the main Premiers Crus on the left bank of River Serein, the clay limestone Climats of Beauroy extend beyond Chablis and reappear in several surrounding precincts. William Fevre retain a single hectare of the thirty seven at Beauroy, albeit from the superior sub appellation of Les Troësmes, one of the first terroirs to have been classified as Premiers Crus. The Chablis of Les Troësmes demonstrate a conspicuous measure of finesse and are renowned for their capacity to evolve gracefully.

Located in the cool, dry Sunbury region, Wildwood have been quietly crafting wines of elegance and balance since 1983. Priority is given to managing the land with care and respect, allowing the vines to express their character as naturally as possible. Chardonnay from two blocks on the Wildwood estate are fashioned to old world charm and contemporary styling. Wignalls were established 1982 after investigations into the local geography by founder Dr Bill Wignall. Results showed Albany's growing conditions were virtually identical to some of the great terroirs in France. An estate harvest of Burgundian clones Chardonnay, finished to a style of the most sophisticated balance between bold varietal fruit and subtle savoury complexities. Grapes are destemmed and gently pressed, the slightly cloudy juices are racked directly to seasoned and new French oak barriques for a traditional, old world ferment. Batches are stirred weekly over the course of nine months maturation before assemblage.
